sorting blog category order

Hi all,
first of all:
Sorry for my English!

I have a question about my blog:
I just add some categories and i add them in alphabetic order in the category page (as in the image I attaced) but in th blog menu they visualize in another order, can I sort it?

In the same time,
can I hide "ALL" from categories?
I don't like a English word before 4 Italian words…
